Okay -- so I decided to be adventerous and create my very own wiki. I plan on using the Wiki for students to do research throughout the year. It was actually very easy to create and edit. I haven't added anything as far as assignments go; but it is definetly something that I will continue to work on. Here is the link to my wiki if anyone wants to look at it and offer any suggestions!

Your wiki looks great! If you get to feeling brave, you could give your students access to post sites that they find themselves. You can track who has made what revisions, in case anyone decides to get off task.
If they are working in groups, they could use the wiki to organize their work and keep track of their notes.
As you said, there are LOTS of possiblities.
